History of the label: Onto the label someone can see a scene of the greek traditional shadow theater, called Karagiozis. Karagiozis was the greek guy who was always against the rich conquerors who were the responsible for the deterioration of the conquered country. Like Karagiozis the natural wines “fight” against the conventional wines which are part of the biggest problem of our world, the deterioration of the nature.
Tasting notes:
Bright golden color. Rich, intense nose which evolves minute after minute into the glass. The aromas of pear and quince reveal at the beginning giving their place to the aromas of sage, achillea and laurel afterwards. Harmonious in the mouth with a long-lasting aftertaste.

Winemaking report
Before the fermentation, a cold maceration (5-8ο C) takes place for almost 2 days, depending on the year. After that, the must ferments in stainless steel tanks in controlled temperature (18-21ο C) with indigenous yeasts and no oenological substances added. Spontaneous malolactic fermentation. The produced wine racked for the very dense sediments and stirred on fine lees for three months. No protein stabilization, no fining, no filtration, no added sulfites only tartaric stabilization.
Aging potential
Aging potential up to 5 years. Bottled with a natural cork closure, in order to ensure a unique aging capacity. Ideal serving temperature between 12-16ο C.
