History of the label: The label is a depiction of the greek traditional shadow theater, called Karagiozis, a representation of the Greek common people during the Ottoman rule. Despite it's simplicity, this shadow play managed to truthfully illustrate the different aspects of the society. The shadow play white, is a single variety wine, simple yet complex and authentic expression of the greek indigenous variety Assyrtiko.
Tasting notes:
Bright golden colour. Rich, intense nose which evolves minute after minute into the glass. The aromas of pear and quince reveal at the beginning giving their place to the aromas of sage, achillea and laurel afterwards. Harmonious in the the mouth with a longlasting aftertaste.

Winemaking report
Before the fermentation, a cold maceration(5-8ο C) takes place for almost 2 days, depending on the year. After that, the must ferments in stainless steel tanks in controlled temperature(18-21ο C) with indigenous yeasts and no oenological substances added. Spontaneous malolactic fermentation. The produced wine racked for the very dense sediments and undergoes battonage on fine lees for three months. No protein stabilization, only tartaric stabilization.
Aging potential
Potential age up to 5 years. Bottled with a natural cork closure, in order to ensure a unique aging capacity. Ideal serving temperature between 12-16ο C.
Food matches
The wine match great with fish and seafood, pasta, vegetable dishes, matured cheeses and light poultry.
