History of the label: Stalisma in Greek is the rest of the herd in a shady place on summer afternoons where a cool air passes. Our stalisma wines are like that. They are so refreshing, like the cool fresh air during the hot summer afternoons.
Tasting notes:
Really profound nice rose color. The nose is the characteristic of Xinomavro variety: sun dried tomatoes and black olives. Notes of strawberry and blackberry complete this impressive bouquet. In the mouth, rich, with intense and noticeable but well-balanced acidity. At the end, the long persistent fruity aftertaste with little residual sugar leaves an impressive ‘greek summer’ sensation.

Winemaking report:
The wine ferments with its indigenous yeasts, with no added oenological substances. After the end of fermentation, we put the wine in old barrels for 2 months and we do stirring on its own fine-lees. We don’t do protein stabilization or fining or filtration only tartrate stabilization. This wine doesn’t finish its fermentation after 20-25 days like the rest of our wines. The fermentation stops the winter- some residual sugars left, around 10g/L- and rebegins the next spring. No added sulfites.
Aging potential:
Aging potential up to 3 years. This wine is bottled with a natural cork closure, in order to ensure a unique aging capacity. Ideal serving temperature between 12-16ο C.
