Tasting notes:
The wine is, unsurprisingly, lively and brisk with fresh citrus, orange,and the snap of jasmine flower to the nose. To the mouth the tastes of rose and yeast are predominant. The crown cap holds in the fizz.

Winemaking report:
We let the must of Muscat with the skins for some days in cool temperature before the fermentation and during the fermentation. After the end of fermentation we put the wine (of Muscat) into small amphoras for some months. The next year we add fermented must of Moschofilero to the wine in bottle. This provides the sparkle and lees-y feel as it gets turned into alcohol and CO2, and not disgorging makes it hazy, creating broader palate weight, pleasing textures, and balance throughout. This special bottling is done entirely by hand. No sulfites added, no protein stabilization, no filtration, no fining.
Aging potential:
Aging potential up to 2 years. This special wine should be opened and enjoyed cold.
Ideal serving temperature between 4-6ο C.
